CPI Intern Makes a Difference at Benny's Pantry
July 7, 2021
CPI intern Crystal Larsen鈥檚 supervisors have praised her initiative in helping Benny鈥檚 Pantry become more accessible, easy-to-navigate, and helpful for students, but she is humble about her work.
鈥淔or me, it鈥檚 nothing outstanding, but working there has been a really rewarding experience,鈥 she said. 鈥淏eing able to help is such a great feeling.鈥
Larsen has been working as a Career Path Intern for Benny鈥檚 Pantry, a food pantry for students facing food insecurity. In her role, she has reorganized the pantry, and found creative ways to overcome obstacles. For example, students may have only a microwave for cooking. Larsen. created a microwave recipes list and food kits for students that weren鈥檛 previously available.
However, the biggest challenge she has faced is keeping the pantry stocked. Larsen is hoping to start a food drive to help relieve the strain on the pantry.
鈥淲e have a surplus of pasta, but other items like eggs, milk, and other basic grocery items go out quickly. We want to offer more than canned goods and pasta,鈥 she said.
One thing Larsen has come to appreciate has been the food programs that are available and the school鈥檚 involvement in students鈥 food security.
鈥滷ood is not something that you would think of as a freshman student. It鈥檚 usually, 鈥業鈥檒l be fine,鈥 but sometimes you do need help,鈥 she said.
Larsen's hard work hasn't gone unnoticed by her supervisors.
"She has just been amazing! She is one of the best CPI students I have ever had!鈥 said supervisor Stephanie Foreman.
